The Salt Room

Locally sourced. Cooked over fire.

Brighton’s Best Seafood Restaurant

Set on Brighton's seafront with uninterrupted views of the West Pier, The Salt Room is one of the city’s leading seafood restaurants - built around fire, flavour and a room that knows how to have a good time. Newly reimagined from the ground up, The Salt Room has reopened for a new chapter by the sea.

The same bold cooking that earned our reputation: the finest local seafood, charcoal-grilled and served with precision. A wine list designed to match every dish. Cocktails worth lingering over. A terrace that belongs to the last light of the day.

New space. Same salt air. The Salt Room is back.

Quality seafood with spectacular seafront views

The Salt Room is Brighton’s premier seafood restaurant, known for cooking over charcoal and sourcing the best local produce from the South Coast.

Our menu is built around fresh fish, shellfish and carefully selected meats – all cooked over fire for depth, flavour and simplicity.

The bar is just as considered. Seasonal cocktails, an extensive wine list and a terrace that comes alive from day to night. This is coastal dining – elevated, energetic and unmistakably Brighton.

A two-tiered metal seafood platter filled with fresh seafood on shaved ice sits on a restaurant table at The Salt Room. The top tier features deep red tuna sashimi, lemon wedges, cucumber sticks, two shot glasses with red-spiced rims, and skewers of olives. The bottom tier holds fresh oysters in their shells, scallops served in their natural fan shells, and small condiment bowls. In the background, a bottle of champagne and a filled flute glass rest on the marble tabletop near green terrace foliage.
A wide, twilight shot of the calm blue sea featuring the silhouette of the historic, rusted iron framework of the ruined West Pier in Brighton. The horizon line sits under a pale purple and blue evening sky. In the foreground along the pebble beach, several small boats are lined up, and the dark vertical lines of sailboat masts cut into the right side of the frame.
A top-down shot of a circular plate containing a smooth taramasalata dip at The Salt Room. The pale pink dip is swirled with pools of bright green herb oil, topped with orange trout roe, and decorated with two thin, edible crackers shaped like fish skeletons. It sits on a pinkish-beige marble table flanked by the edges of other side plates.

Outside, a pedestrian strolls on the promenade, with the historic Brighton Bandstand and the skeletal frame of the West Pier ruins visible on the left under a soft evening sky.

The oyster shells have bright red-spiced rims and are dressed with a savory sauce, small green garnish spheres, and celery leaves. Two hands reach in from opposite sides to grab an oyster shell.

Our Menus

Our seaside venue is the best restaurant in Brighton to enjoy sustainable, local produce.

Our menu is shaped by what arrives with the tide – wild and naturally harvested fish, selected each day for freshness, sustainably sourced shellfish from the South Coast, alongside vibrant vegetable dishes and prime cuts from the Lake District.

Cooked over charcoal with skill and care, our bold flavours are influenced by the Mediterranean, South America and Asia – always rooted in the provenance of our coastline.

A high-angle shot of a refreshing pale yellow shiso mojito filled with crushed ice in a tall highball glass. The drink is garnished with a single green shiso leaf standing upright in the ice. The glass sits on terracotta floor tiles, catching a dramatic diagonal beam of bright afternoon sunlight that casts a long shadow to the bottom left.

Our Drinks

A drinks list as carefully considered as the menu. Crisp coastal whites, elegant rosés, Champagne by the glass and seasonal cocktails designed for a seafront terrace.

Every pour is chosen to bring out the best in what’s on your plate.

From aperitivo on the terrace to a long evening at the bar – the Salt Room sparkle begins the moment you sit down.
