A rebirth, not just
a refurb
As The Salt Room turns 11, we find ourselves in the middle of a transformation that’s been years in the making. More than a refurbishment, it’s a considered rebirth – one that builds on our roots, celebrates our place on Brighton seafront, and sets the stage for the next chapter.
Celebrating 11 years of The Salt Room
As many of you will know, The Salt Room is currently closed while we carry out a transformative refurbishment. With our 11th birthday falling on the 15th of February 2026, it felt like the right moment to share a few words with you personally.
When we opened, there were very few true fish restaurants in the city, especially on the seafront. Being so close to the sea, it felt only right to celebrate seafood cooked with confidence and simplicity.
The Salt Room was always the yin to The Coal Shed’s yang. What we’d learned through fire and meat, we applied to fish – whole fish to share, chalked up on blackboards, cooked over fire. Just four months after opening, we were placed No.37 in the Top 100 Restaurants in the UK, and in 2017 we were honoured to win The Caterer’s Seafood Restaurant of the Year. More importantly, I’m incredibly proud of the team who’ve come through our doors – many of whom have gone on to run their own brilliant restaurants.
Our new vision
Introducing a new chapter to The Salt Room after 11 incredible years, it will reopen with a refreshed look that enhances its stunning views of the sea and the iconic West Pier. This is where Brighton’s vibrant and unique spirit meets the effortless elegance of Britain’s quintessential South Coast.
At The Salt Room, fresh seafood, quality meats, and vibrant vegetarian dishes take centre stage in a setting that embodies refined yet relaxed modern coastal dining. Our new glass-enclosed dining space will bring the terrace experience indoors, letting you enjoy unparalleled views all year round, whatever the weather. Combined with a lively bar and an open kitchen that celebrates culinary craft and conviviality, this is dining at its finest.
This modern seafood restaurant, inspired by our seaside location, will continue to honour the tradition of cooking over coal. We will have an even stronger emphasis on showcasing the flavours and techniques from our travels, using sustainably sourced, local ingredients. Employing the same fire-driven techniques as our Black Rock sister restaurants, our kitchen will craft bold, flavour-packed dishes showcasing the freshest catches, shellfish, and select meats. Seasonality will be at the heart of the dining experience here, extending beyond the menu to our evolving cocktail list. Each season brings innovative creations layered with earthy herbs and subtle sea spices.
