The centrepiece is arroz caldoso: rice slowly simmered in saffron and shellfish stock, abundant with the best of British lobster, monkfish and clams sourced by the best of the best at Brighton & Newhaven Fish Sales. Generous and made for sharing, it’s the kind of dish that brings everyone back to the table. There’s also warm house bread with aioli and a bitter leaf salad with sherry vinegar.
To finish:
A taste of the Basque Country: burnt cheesecake with grilled plums, creamy, scorched and sweet. Specially curated wine pairings will also be available – too good not to indulge in.
