With 2022 fast approaching we’d like to invite you to the party of the year.

​We want to start this year as we mean to go on, with an opulent feast like no other. Our Head Chef Brice and his team have been working hard to craft an evening to fit the occasion. Just a stone’s throw from Brighton beach with unbeatable seafront views, The Salt Room is offering two seatings with accompanying tailored menus that will have you talking about the clock striking twelve for years to come!

​​The New Year’s Menu takes its DNA from our classic ethos of the best of British ingredients, alongside sustainably-sourced fresh seafood. We’d recommend starting with our Charred Orkey Scallop, served with sauternes and ‘nduja butter. The main event just has to be our Pan Fried Halibut, it will melt in your mouth and is coupled with Violetta artichoke, salsify, and then lovingly smothered with caviar and Champagne sauce. Of course… there’s pudding, and our very talented Pastry Chef Jess has really brought her A-game. Her crowning glory has to be her achingly modern take on a Frangipane, served with stem ginger, poached rhubarb, and ice wine.

Our Early Seating from 5-7 pm is £80 pp and includes three courses

​Our Late Seating from 7 pm onwards is £120 pp, with four courses and live music we’ve set a stage that promises to create a night to remember
